In a Skype connection for the "Alert" show on News24 by the journalist Granit Sokolaj, Prof.Dr. Abdyl Sinani, a food expert, spoke about the importance of the technological card and food additives, fas he said, there have been cases where these addictives have been carcinogenic.
"Cereals contain 60% of the energy we eat. We have a very good group of specialists in the production of flour and bread. The technological card is the main one to be followed by the AKU engineer, a part does not respect the technological card and this is because the bread turns out to be dry. As for the removal of saws, bread when cut is made to dry faster, but it is not proven to be related to coronavirus. Some types of bread accept cutting, while some do not. If there are technicians in the bread factories, to follow all the links, food security will increase. Today, the cost and quality are being fought for,” said Sinani.
Regarding additives, Sinani said that they are necessary, but there have also been cases of abuse, with carcinogenic additives.
"The bread is integral, the whole grain of wheat, about 2-3% of it is removed in the factory. The technologist looks at it with an analysis done in all flour mills. If the ash content is 1.3 or 1.4 we say it is integral. If it is 0.6 or 0.65 it is white flour but colored flour. Adding additives, 3 years ago, some types of additives were added, but were carcinogenic, harmful, made the bread very beautiful and good on the outside, and it was not understood. The problem was that there was no control. The flour coming from Serbia had less protein and was replaced by additives. By studying and on the basis of control it was discovered and replaced with goods that were necessary for the organism. With a kind of wheat...the additives are not bad, but necessary to be used in industry, but it requires the implementation of the technological card." declared Abdyl Sinani.
